Dieting Is Painful This Time of Year… Let’s Eat Pie

This time of year our self-control gets put to the test. Believe me, I know. I’ve got a box of Sees candy in the fridge given to me as a gift. If I open it, all hell will break loose. I’m the one who went through two boxes of Tofutti Cuties in about four days. I bought them for some teenagers who were coming to visit but didn’t show up. If you haven’t tried non-dairy ice cream sandwiches, you are missing out. But I can’t do that all the time. But I can still enjoy desserts, one of my favorites is pumpkin pie. In the summer I grow lots of pumpkins but you can buy pumpkin in the can and still make a nice pie. Where I save on calories is in the crust. What crust? That’s what I should say but hey… it works. I take a glass pie pan and sprinkle the bottom with about 1/3 cup of whole wheat flour. That’s it. I pour my pumpkin pie mixture into the pie pan, over the flour and I bake the pie. It’s really good. Eat Good Food and You’ll Have Good Energy

I feel great today. What did I eat in the last 24 hours? The answer was lots of healthy, wholesome foods. As a vegetarian I have to work at getting enough protein but spending a little time in the kitchen provides me with plenty of nutritious alternatives. If you’re dragging around, take stock of what you ate in the last 24 hours, it’s a little more work to prepare foods from scratch but fresh salads, whole grains, beans and legumes will provide better energy than fast foods, high fat microwavable dishes, etc.

Chubbiness Runs in my Family

When I went to New Orleans last summer to visit my father’s family, they all kept calling me “Chubby’s daughter.” Chubby this and Chubby that, even at one point my cousin said, “You don’t mind if we call him Chubby do you? That’s what we all called him.” No I didn’t mind except it made me feel a little chubby myself, after a fashion, but my father was a jolly guy, the good Lord didn’t make many like him and probably never will. But it kinda makes you wonder about the way chubbiness runs in families. “I don’t eat very much,” I hear family members say, to which I roll my eyes, after all, I’m the one that just saw them order at the last restaurant and after they ordered quite a bit they looked at me and said the same thing, “I don’t eat very much.” My father used to think it was hilarious the way my sister and I gobbed butter on our French bread when out in restaurants during the 1960’s, “You want bread on your butter?” he used to say teasingly, as if admiring our extravagant taste, either that or proud that we were just like him. But times have changed. Technology allows us to see what gobs of butter does to our heart. Bad habits are hard to break but when my husband went to the doctor and was diagnosed with high cholesterol, the doctor had some great advice, “Don’t eat butter.” So we don’t and ya know what, it took awhile to get used to it but olive oil works for me. But next time you see my brother, try to explain to him that just because those who consume olive oil tend to suffer less strokes, does not mean that you pour it all over your food … butter and all. Sometimes It’s Not About What You Eat – It’s About What You Don’t Eat

You want to stay healthy and keep your weight down, right? Rule number one – steer clear of restaurants. You’re in denial if you don’t believe there is a lot of extra calories in restaurant food. Eating out is fun but in moderation. Restaurant chefs add a lot of butter and oil. It’s what makes it tasty. Cooking at home may not be as delicious as what you’ll find in restaurants but you do what it takes to stay healthy. Sometimes it’s not what you eat but what you DON’T eat that keeps you healthy.
