What’s with the Polyester Dishtowels? Obviously, They’re Not Cooks

It’s not just discount stores that sell dishtowels with polyester weave. I was given a beautiful set from an upscale cooking store and they are terrible! You can’t dry your hands with them and it’s just as hard to dry dishes. What were they thinking? Obviously, they weren’t and they probably don’t spend time in the kitchen where we run water constantly. Those who love to cook are always washing and drying their hands and need an absorbent towel to wipe up spills. What? Do they think we stick microwave dishes in and only hang the pretty dishtowels for looks? Even someone whose idea of cooking means four minutes in the microwave, still has to wash his hands. And who doesn’t spill liquids on the counter? I guess the day has come when pretty dishtowels are just for looks, like decorative soap in the bathroom. (In my bathroom, I’ve got a bowl of soap shaped like acorns, given to me by the same person who sent me the polyester dishtowels, bless her heart.) What? Do they think today’s cooks only use paper towels? Don’t get me started. What is in those things? Certainly not paper. If you hold it up to the light, you can see and feel the plastic. Definitely not very biodegradable. Sigh.

It’s time to throw out the fake dishtowels. And while I’m at it, go into the bathroom and toss the fake bath towel. Although it does look rather pretty next to the decorative acorn soap. And really, who needs to dry their hands?

There Was a Feeling in the Air… Hard Times Were Sure to Come

After I wrote “Acorns and Eat’em,” a how-to cookbook for gathering and preparing acorns, I wanted to share what else I had learned while living in the mountains, far from the grocery store, with a limited budget. Y2K was fast approaching and survivalists were sending me checks for my acorn book. Obviously there was a feeling in the air that hard times were sure to come. I care about people and nutrition so I continued creating unusual recipes from simple, natural, unprocessed ingredients. The Beauty In Beans … They Are Nutritious … Easy and Inexpensive

Beans have got to be one of the cheapest foods available. Humans have cultivated them for thousands of years. Some of the beans we plant in our gardens are the same variety the ancients planted in theirs. I don’t doubt that cultures who eat a lot of beans also have nice skin, hair, bones, nails, etc., provided they’re other nutritional needs are met. Beans have the fiber we need, they have protein, no fat, no cholesterol and almost no salt unless added. One quarter cup of dried black beans has nine grams of protein and that can be increased if you eat corn or rice with it.  They’re delicious too. What’s not to like? I’m cooking black bean chili today. I’ll cook up the black beans then add some cumin spice, onions, basil, oregano, a little soy sauce and I’ll add some tomatoes as well. I leave it on the back burner all day and maybe I’ll toss a teaspoon of brown sugar into the pot to bring out the flavor. About an hour before dinner I’ll make some whole grain whole wheat corn bread. My husband will love it and I will too.

Rhubarb Is One of the Strangest Edible Plants But Healthy For Us

Rhubarb has a most unusual consistency, it’s kind of gooey and stringy but perfumey to the palate and according to my old herbal, is a great tonic. The leaves are poisonous but after removing them the stalks can be cut into one inch pieces and simmered lightly in a few tablespoons of water. Pour the steamed rhubarb into a bowl and add honey to sweeten. This “sauce” can be used as a side dressing for whatever your imagination drums up. Just present the bowl of cold sauce at breakfast and have it with eggs and potatoes or have it as a side dish with dinner alongside brown rice and your favorite protein and salad. Go Ahead Get a Little Egg on Your Face, Make Dumplings!

Making egg dumplings doesn’t require much effort or ingredients. They’re also hard to mess up. Because it requires little resources, if you mess it up you haven’t wasted much food. Dumplings can be dropped into any soup or stew. They would also be good dropped into simmering Italian sauce and there is no end to how you could get creative with dumplings. Because they are made with flour, it’s a quick way to add carbohydrates to your meal without making biscuits or bread. Here is a simple recipe:

1 & 1/2 cups whole wheat flour

1/2 cup of milk (I experimented with water and it worked so try soy, rice or almond milk)

1 beaten egg

salt to taste

In a small bowl, beat the egg with the milk and no more than 1 teaspoon salt. With a wooden spoon, mix in the flour. Drop by spoonfuls into your choice of simmering stew or soup and cover with a lid, cooking about 15 minutes.  Remove from heat and serve.

Variations could include adding spices and experimenting with different types of flours.

Sit Down, Relax and Read a Cookbook

I’ve found that the act of merely reading a cookbook will make you a better cook. It’s a lot like looking at a fashion magazine. You get ideas. Trust your mind to store enough elements of that spicy Spanish rice recipe and trust it to remember the way the Italians threw an egg in the middle of some dough to make egg noodles. I have a whole shelf full of cookbooks and you may too. There is no way that I have the time to make all the tantalizing recipes in those books but I do have the time to now and again put my feet up and read about how others spend their time in the kitchen. What spices do they use? How high do they turn up the oven up for desserts? What fruits do they throw into salads and what type of greens do they use? When you’re cruising through the produce isles, a red light will go off and you’ll grab that green pepper for stew, the mango for salad and the sweet potatoes for a different piecrust.

Fried Green Tomatoes? Here’s How…

An early American classic. Fried green tomatoes have been enjoyed in the early summertime for many years. Why wait for the red ones, we’ll have plenty of those. When the big green tomatoes appear, enjoy a treat quite different than red ripe tomatoes. Slice green tomatoes and dip in a beaten egg then into dry corn meal. Lightly oil a skillet. Over medium heat cook covered about 3-4 minutes, turn. Cover again and cook until done. Options include adding garlic or onion powder to the beaten egg and Parmesan cheese as a topping.

Poor Jonny’s Infatuation Tacos

1 dozen corn tortillas

2 cups corn sprouts (dried corn kernels that have been soaked and sprouted)

1 small can tomato paste (6 oz)

½ cup peanut butter

½ cup diced yellow onion

½ tsp sweet basil

lettuce

Steam corn sprouts, set aside. Add 1 cup water, diced onion and sweet basil to tomato paste and heat. Add peanut butter to this and stir. Warm tortillas, (lightly steaming them works great, don’t steam but for a minute or the tortillas will stick together). Stuff tortillas with steamed corn sprouts and top with peanut onion mixture and lettuce.

Creative Recession Cooking

People become creative in the kitchen when they use what they have so in today’s economic climate, there must be a lot of creative cooking going on. It’s said, “true creativity comes with an obstacle”. Today, that obstacle may be a tight grocery budget. If You Don’t Feel Good, Eat Beans! No Kidding!

My husband laughed when I said this to him but my bean and legume soups help him to cut firewood, build barns, repair cars and ride motorcycles in the cold. A big bowl of split pea soup will provide 11 grams of protein; eight percent of one’s daily Vitamin A, fifteen percent daily iron requirements and drum roll here… forty-four percent of daily fiber. Black beans provide nine grams of protein per serving and a whopping sixty-percent of daily fiber needs. Lentils provide eight grams of protein per serving and thirty-six percent daily fiber needs. AND there is absolutely NO fat or cholesterol in them, ZERO. If you need to go fat free, you can make delicious dishes with beans and legumes without adding any extra fat. If you don’t believe me, just ask my husband when he gets finished hefting that hay.
