Always Keep Curry Powder Around, Especially If It Contains Turmeric

Are you tired and want to make an easy dish? Take a couple cups of  leftover cooked brown rice and mix it with the same amount of cooked black beans and two or three raw eggs and a little curry powder to taste. Mix it well. Put it into a glass pie cooking dish and microwave it for about 20 minutes. If you microwave it you won’t need to oil the pie dish, thus making it fat free. Have it with a nice salad and some steamed zucchini and onions. Go Ahead Get a Little Egg on Your Face, Make Dumplings!

Making egg dumplings doesn’t require much effort or ingredients. They’re also hard to mess up. Because it requires little resources, if you mess it up you haven’t wasted much food. Dumplings can be dropped into any soup or stew. They would also be good dropped into simmering Italian sauce and there is no end to how you could get creative with dumplings. Because they are made with flour, it’s a quick way to add carbohydrates to your meal without making biscuits or bread. Here is a simple recipe:

1 & 1/2 cups whole wheat flour

1/2 cup of milk (I experimented with water and it worked so try soy, rice or almond milk)

1 beaten egg

salt to taste

In a small bowl, beat the egg with the milk and no more than 1 teaspoon salt. With a wooden spoon, mix in the flour. Drop by spoonfuls into your choice of simmering stew or soup and cover with a lid, cooking about 15 minutes.  Remove from heat and serve.

Variations could include adding spices and experimenting with different types of flours.

If You Don’t Feel Good, Eat Beans! No Kidding!

My husband laughed when I said this to him but my bean and legume soups help him to cut firewood, build barns, repair cars and ride motorcycles in the cold. A big bowl of split pea soup will provide 11 grams of protein; eight percent of one’s daily Vitamin A, fifteen percent daily iron requirements and drum roll here… forty-four percent of daily fiber. Black beans provide nine grams of protein per serving and a whopping sixty-percent of daily fiber needs. Lentils provide eight grams of protein per serving and thirty-six percent daily fiber needs. AND there is absolutely NO fat or cholesterol in them, ZERO. If you need to go fat free, you can make delicious dishes with beans and legumes without adding any extra fat. If you don’t believe me, just ask my husband when he gets finished hefting that hay.

Eat Good Food and You’ll Have Good Energy

I feel great today. What did I eat in the last 24 hours? The answer was lots of healthy, wholesome foods. As a vegetarian I have to work at getting enough protein but spending a little time in the kitchen provides me with plenty of nutritious alternatives. If you’re dragging around, take stock of what you ate in the last 24 hours, it’s a little more work to prepare foods from scratch but fresh salads, whole grains, beans and legumes will provide better energy than fast foods, high fat microwavable dishes, etc.

Chubbiness Runs in my Family

When I went to New Orleans last summer to visit my father’s family, they all kept calling me “Chubby’s daughter.” Chubby this and Chubby that, even at one point my cousin said, “You don’t mind if we call him Chubby do you? That’s what we all called him.” No I didn’t mind except it made me feel a little chubby myself, after a fashion, but my father was a jolly guy, the good Lord didn’t make many like him and probably never will. But it kinda makes you wonder about the way chubbiness runs in families. “I don’t eat very much,” I hear family members say, to which I roll my eyes, after all, I’m the one that just saw them order at the last restaurant and after they ordered quite a bit they looked at me and said the same thing, “I don’t eat very much.” My father used to think it was hilarious the way my sister and I gobbed butter on our French bread when out in restaurants during the 1960’s, “You want bread on your butter?” he used to say teasingly, as if admiring our extravagant taste, either that or proud that we were just like him. But times have changed. Technology allows us to see what gobs of butter does to our heart. Bad habits are hard to break but when my husband went to the doctor and was diagnosed with high cholesterol, the doctor had some great advice, “Don’t eat butter.” So we don’t and ya know what, it took awhile to get used to it but olive oil works for me. But next time you see my brother, try to explain to him that just because those who consume olive oil tend to suffer less strokes, does not mean that you pour it all over your food … butter and all. Sugar? Brings Out the Ugly Twin?

I know they have a book out called “Sugar Blues” but how about “Sugar Bitch”? I’ll tell ya, I have to stay away from the stuff as it brings out a nasty twin sister that dwells inside. If you don’t believe me you can ask my husband. Good thing I am into health foods. It really surprises me what an impact a little bit of sugar has on me. It makes my temper flare, makes me grind my teeth makes me impatient and yes it can bring about the blues. It’s too bad because it does a nice job on a hot cup of tea on a cold winter’s afternoon but this kid … no can do. That twin, she is NOT fun to hang out with.

The Problem With People is They’re Hungry All the Time, lol …

I can say proudly that I am the cook at my house. Years ago I took control from my husband and declared, “I’m the food manager”. That was my blunt way of informing him that I was going to control the show in the kitchen. He did not mind. Thirty years later he still doesn’t mind. The more I cook the more he loves it. He tells people what a great cook I am and enjoys most everything I make. The problem is, like the rest of us, he’s hungry all the time. I once saw a video that was taken at Thanksgiving. The mother of the videographer worked all day long in the kitchen which many people do on our favorite food holiday but when they fast-forwarded the video, we watched her in high speed, for a long time cooking, bending, baking, etc. When it came time for everyone to eat, the fast-forward video showed everyone scoot their seats up then scoot them back and leave the table. If you blinked you missed it. It was hilarious. Those of us who put our heart and soul into cooking can relate to the video and it’s a good thing there are lots of left overs at Thanksgiving. But I’ll tell you, I just wish we weren’t so prone to having to eat, all day long, everyday. Why, some of us even wake up in the middle of the night to eat. Whoa, what’s up with that? Ice cream? Think about it, we are eating machines.  And if I don’t  eat and eat well, I have no energy. Like I said, we are eating machines. We are just like a car. No gas no go.

Protein, Protein, Protein … but not too much

As a vegetarian if I don’t receive enough protein I will eat and eat and eat … and eat! Until my body receives the protein it needs, I’m hungry! Yet I cringe when I read about cancer being caused by a “protein” that runs amok. Eating too much protein can cause its problems and finding adequate protein without turning to animal sources is sometimes frustrating. But mixing the right amino acids together, which can mean beans and rice is crucial to satisfying hunger.

It’s very tempting to simplify things and think that because one is obese they are well-fed. Protein is expensive and many who are struggling financially eat a lot of starches (macaroni and cheese boxes) to get by. Higher quality starches like whole grain brown rice and whole grain pastas and breads, though they are more expensive, are a better bargain in the long run because of the nutrition they provide.

The Apple Diet – Pretty & Fresh

When I first got together with my husband he had us go on an “apple diet”. But it wasn’t entirely apples, he allowed us to eat a little raw cabbage as well.  It didn’t last very long, probably just a day and a half and after we were through we smelled like apples. It wasn’t too big a deal for me because I’d been enjoying apples from the trees I found out in the woods and eating quite a bit of them because they were so pretty and fresh, I was young and believed that if I ate something so pretty and fresh right off the tree, I couldn’t help but look that way too.  Now days, I still eat fresh apples but just one at a time, sometimes only three apples a week. But I noticed that when I’m craving something, anything, whether it feels like I need protein or sugar, that apple really hits the spot.
